Cara Mia:

Linguini,Zucchini and Cara Mia:


1 lb linguini
1 T olive oil
1 ½ lb fresh zucchini, sliced thinly
1 tsp sea salt
½ tsp fresh ground pepper
2 cloves garlic, chopped
8 oz CheesyGirl Cara Mia chévre
2 T chopped flat leaf parsley

Cook the pasta according to the package directions. Remove and set aside 1 cup of the cooking water, drain the pasta, and return the pasta to the pot.

Heat the oil in a medium skillet over medium-high heat. Add the zucchini, salt, and pepper. Cook, stirring until the zucchini is tender, about 5 minutes. Stir in the garlic and sauté another 2 minutes. Add the cheese and reserved cooking water to the pasta. Stir until creamy. Serve the pasta topped with the sautéed zucchini and fresh parsley.
